Description

This specialty, the SEPP'Bergkräuterstückl, is made from pork loin and traditionally dry-cured with salt and natural spices, lightly smoked, and aged for about 10 weeks. After aging, the Bergkräuterstückl is washed, dried, coated with herbs, and packaged. The Bergkräuterstückl is characterized by a reddish-brown, dry surface with herbs and a strong, intense red meat inside, without visible fat.

Serving Suggestion

We recommend slicing the SEPP'Bergkräuterstückl very thinly (similar to “carpaccio”) and garnishing it with Parmesan, rocket, olive oil, and possibly balsamic vinegar to taste.
