This South Tyrolean Speck carries the "protected geographical indication (PGI)" seal, which is only awarded to specialties that meet the most stringent criteria. The speck must be made from the ham using traditional methods. The South Tyrolean Speck Consortium regularly checks compliance with the strict quality criteria. Serving suggestion

The speck tastes best when sliced as thinly as possible against the grain, as this gives it the right bite.
